Arugula Spinach Salad with Winter Citrus

Description

A simple, tasty, and vibrant salad! Arugula is tossed with fresh baby spinach and topped with thinly sliced sweet onions, sweet winter citrus, and a super simple homemade vinaigrette.

Simple Vinaigrette Dressing

Arugula Spinach Salad 

  • 5 ounces (about 5 cups) equal parts arugula and baby spinach
  • 1/2 cup very thinly sliced sweet onion 
  • 3 mandarin oranges, peeled and sliced into rounds
  • 1 batch Simple Vinaigrette Dressing


Instructions

Simple Vinaigrette Dressing

  1. Add all of the ingredients to a mason jar with a tight-fitting lid.
  2. Tightly screw the lid on the mason jar and give it a good shake until the vinaigrette ingredients have fully combined.

Arugula Spinach Salad

  1. Add the arugula, baby spinach, and onions to a large salad bowl and toss. 
  2. Arrange the sliced mandarin oranges on the salad.
  3. Drizzle vinaigrette on the salad. Serve immediately and enjoy!

There are several different varieties of sweet onions. If you’re having trouble finding ‘sweet onions’ at your grocery store you may find them by their names such as Vidalia, Walla Walla, Texas Sweet, Sweet Mayans, or Maui onions.

Other sweet winter citrus such as tangerines, clementines, oranges, or grapefruit would also work in this salad. Just make sure to adjust the amount of citrus you use based on its size.

Optional salad add-ins for even more tastiness: Sliced avocado, chopped dried cherries, dried cranberries, pepitas (or another seed and/or chopped nut that you enjoy), pomegranate arils, or soft goat cheese.
