    No really. Overnight oats should definitely be your new breakfast thing. A handful of ingredients, only 5 minutes prep time, and an overnight stay in the fridge while you're getting your beauty rest, this oaty mixture becomes thick and ultra-creamy and will be ready and waiting to feed your hungry food soul in the morning when you open up your purtty eyeballs.

    Everyone will love this overnight oat recipe. Vegetarians, vegans, omnivores, carnivores, gluten-free-ers, oat eaters, berry eaters, peanut butter & jelly lovers, people with hectic mornings, hungry-as-soon-as-they-wake-up people, and people who like to eat their food out of cute jars.

    Everyone.

    Except for maybe the people who shudder at the idea of cold oatmeal. Those people will require some subtle coaxing and peer pressure. But it won't take much. (insert evil laugh)

    Ignore the evil laugh and just focus on the part about eating out of cute jars. Also take notice that these oats have peanut butter AND berry chia jam in it. Peanut butter & jelly was always destined for more than just a sandwich.

    In case you're not convinced yet, here's a few more reasons to love this recipe:

    • Super simple meal prep for a quick grab-n-go breakfast!
    • The flavor combo of cinnamon, peanut butter, golden flax, and oats is like a cozy tastebud hug.
    • Berry Chia Jam! Berries in the middle. And on the top. And not gonna complain if you even put some on the bottom. Peanut butter overnight oats and Oregon berries are a winning combo.
    • Adaptable! To be vegan or not. That is up to you. Whichever type of dairy/non-dairy milk and yogurt you choose to use in this recipe, it will still be tasty.
    • Satisfying & filling! High in fiber so you'll feel fuller for longer which is definitely needed for those busy, hectic mornings when fitting in a snack before lunch just doesn't happen.
    • Healthy & wholesome! No refined sugars, just unprocessed, heart-healthy ingredients.
    • So tasteeee. Even cold.

    🛒 Ingredients & suggestions

    All of the ingredients for the overnight oats are setout in little bowls on a white countertop.
    • Gluten-free old fashioned rolled oats: Old fashioned rolled oats are the best choice for overnight oats and will provide the best consistency. Do not use quick cooking oats (they will be mushy and soggy) or steel cut (they will remain hard).
    • Oat milk: Any milk will work but keep in mind that whatever kind of milk you use will affect the flavor. Oat milk is my personal fave.
    • Greek yogurt: Greek yogurt gives the oats a super thick, creamy texture while also making the oats more filling. If dairy-free is needed, swap in an equal amount of your favorite dairy-free yogurt.
    • Peanut butter: Almond butter or sunbutter would also be tasty.
    • Raspberry chia jam: Try my homemade berry chia jam recipe! Fresh berries would be delish as well!

    😍 Oregon berry chia seed jam!

    The recipe for the jam is from my Instant Pot Blackberry Chia Jam recipe. It's an insanely easy recipe and uses no refined sugars or pectin. I flip flop between raspberry and blackberry (specifically marionberry blackberry, yummm) chia jam because if you've been hanging with me for a while you know I got a thing for those two kinds of berries. You can't go wrong either way. Both berries are crazy delish in these overnight oats.

    And HEAR ME ON THIS --> You absolutely do not need to wait around for berry season to make a batch of stellar berry jam.

    Grab a bag of frozen Oregon raspberries or blackberries from your grocer's freezer section ANY TIME of the year and know that Oregon berry farmers have raised those little berry babies with all the sweetness and love that could be stuffed inside a juicy berry. They're economical, perfectly ripe, and because they're frozen within 24 hours of being picked, maximum nutrition, juiciness, and tastiness are locked in. BOOM.

    And ooooh mama, they are so tasty in these creamy, peanut buttery oats.

    🔪 Step-by-step instructions

    Step 1: Prepare a batch of instant pot berry jam (using raspberries).

    Step 2: Combine all of the overnight oat ingredients in a bowl (except for the jam).

    Step 3: Seal the bowl with a lid and place in the refrigerator overnight (or for 2-3 hours) to soak and thicken. Remove oats from the fridge and give them one more final stir.

    Step 4: Layer the overnight oats and berry chia jam in some cute sealable refrigerator jars. Then store in the fridge until ready to eat! When ready to eat, don't hesitate to top the overnight oats with an extra dollop of berry chia jam, toasted coconut flakes, peanuts, and a drizzle of peanut butter.

    Even though these overnight oats stray from my typical morning bowl of hot oatmeal, they do not disappoint. And if you're a hot oatmeal purist, you could warm them in the microwave if you'd like. BUT FIRST, be brave and try them. Cold. They really are super tasty straight out of the fridge.

    💭 Frequently asked questions

    How long should overnight oats sit before they're ready to eat?

    They should sit for at least 4 hours, BUT I recommend at least 8-12 hours (hence the name 'overnight') to allow them time to really soak up all of the liquid and become creamy delicious.

    How long do overnight oats last in the fridge?

    Overnight oats last about four days in the fridge.

    Description

    Simple, healthy, super tasty. These berry overnight oats require just a handful of ingredients, 5 minutes prep time, and an overnight stay in the fridge. Naturally sweetened, gluten-free, and a perfect breakfast to start off your day!


    Ingredients

    Overnight Oats

    • 1 batch of blackberry or raspberry chia jam (see notes)
    • 1 cup gluten-free old fashioned rolled oats
    • ½ cup greek yogurt (or sub any yogurt you prefer)
    • 1 cup unsweetened, plain oat milk (or sub other dairy-free milk or regular milk)
    • 2 tablespoons crunchy peanut butter (or sub creamy)
    • 1 tablespoon pure maple syrup
    • 1 tablespoon chia seeds
    • 1 tablespoon golden flax seeds
    • ½ teaspoon cinnamon

    Optional toppings

    • another dollop of berry chia jam
    • toasted coconut flakes
    • roasted & unsalted peanuts, chopped
    • peanut butter for drizzling on top


    Instructions

    1. Prepare jam: Make a batch of berry chia jam following my recipe for Instant Pot Blackberry Chia Jam. 
    2. Make oat mixture: To a medium bowl with a lid, add oats, yogurt, oat milk, peanut butter, maple syrup, chia seeds, flax seeds, and cinnamon and stir until fully combined.
    3. Refrigerate: Seal the bowl with a lid and place in the refrigerator overnight (or for 2-3 hours) to soak and thicken.
    4. Stir: Remove oats from the fridge and give them one more final stir.
    5. Meal prep: Using 3 small jars, approx. 8 ounces each (I use these jars), place a ½ cup of the overnight oats into each jar followed by 2 tablespoons of the berry chia jam. Top off each jar with another ¼ cup of the overnight oats. 
    6. Store: Seal jars and store in the fridge until ready to eat. (see notes)  
    7. Add toppings & eat: When ready to eat, top with an extra dollop of berry chia jam, toasted coconut flakes, peanuts, and a drizzle of peanut butter (optional, but so tasty!). Enjoy your simple and tasty breakfast!

    Notes

    Follow my Instant Pot Blackberry Chia Jam recipe for the berry chia jam in this recipe. If you prefer raspberry chia jam, my preference is to simply omit the vanilla. This recipe will make extra so use the remainder for more servings of berry overnight oats or anything else you enjoy having jam with!

    Overnight oats will keep in the fridge for up to 4 days. However, the longer they sit in the refrigerator the creamier and more soft they become.

    If you prefer your oats warm, just pop them in the microwave for about 45 seconds. You may need to add a bit more liquid if they become too thick or dry after heating.

        Hi Gia! Yes, you can make the chia jam without an Instant Pot. Instead of adding the ingredients listed in the Chia Jam recipe to the Instant Pot you would add them to a small saucepan over medium-high heat instead, stirring occasionally, until the berries begin to break down and bubble. Then mash the fruit to your desired consistency, stir in the chia seeds, remove from heat and allow the jam to thicken and cool. Enjoy!
