GLUTEN-FREE BLACKBERRY SCONES

RECIPE INGREDIENTS:

STEP 1

Mix the dry ingredients:  Add the dry ingredients and lemon zest to a bowl and whisk. Add grated frozen butter to the flour mixture and combine.

Mix the wet ingredients:  In a separate bowl, whisk together egg, vanilla, sour cream, and whole milk.

STEP 2

Combine:  Add the wet mixture to the flour mixture and gently combine just until a moist dough is formed.

STEP 3

Add berries:  Carefully fold frozen blackberries into the scone dough.

STEP 4

Shape scones:  Turn dough out onto a floured surface and shape into an 8-inch diameter disc that is 1-inch thick. Cut into 8 wedges and place in fridge to chill for 15 minutes prior to baking.

STEP 5

Make glaze:  Melt butter in a small saucepan over low heat. Remove from heat and whisk in powdered confectioners sugar, maple syrup, vanilla, and milk.

STEP 6

Glaze scones:  Using a spoon, drizzle glaze on top of each scone. Eat and enjoy!
