GLUTEN-FREE OATMEAL RAISIN COOKIES

RECIPE INGREDIENTS:

• Bob's Red Mill Gluten-Free 1-to-1 Baking Flour • Bob's Red Mill Gluten-Free Old Fashioned Rolled Oats • Bob's Red Mill Baking Powder • Bob's Red Mill Baking Soda • cinnamon • nutmeg • Kosher salt • unsalted butter • fine granulated sugar • brown sugar • egg • vanilla extract • molasses • raisins • flaked sea salt, optional for topping

STEP 1

Mix the dry ingredients:  In a large mixing bowl, whisk together the dry ingredients.

Cream butter and sugars: Cream butter, granulated sugar, and brown sugar together until light and fluffy. Add egg, vanilla, and molasses. Beat until just combined.

STEP 2

Add dry ingredients:  With the mixer on low speed, slowly add the dry ingredients to the wet ingredients and mix until incorporated,.

STEP 3

Add raisins & chill dough:  Add raisins and mix. Then place the bowl of cookie dough in the fridge to chill for 30 minutes.

STEP 4

Scoop the dough: Once the dough has chilled, scoop cookie dough onto a parchment-lined baking sheet. Top with flaked sea salt.
