Description

Calling all garlic lovers! This creamy, garlicky dip is perfect for snacking with crackers, chips, or raw veggies. It’s a quick and easy dip that can be made in less than 5 minutes!


Ingredients

Scale
  • 5 garlic scapes, chopped into smaller 1-2″ pieces
  • 3 tablespoons lemon juice
  • 1/2 cup raw unsalted pistachios
  • 1 (15oz) can organic cannellini beans, drained and rinsed (also known as white kidney beans)
  • pinch of salt
  • 1/2 cup extra virgin olive oil


Instructions

  1. In a food processor, process garlic scapes, lemon juice, pistachios, cannellini beans, and salt until processed to a rough purée.
  2. With motor running, slowly drizzle olive oil through feed tube and process until fairly smooth.
  3. Serve with your favorite dipping food! (I have particularly been enjoying this dip with these baked crispy sea-salt crackers.)
