Calling all garlic lovers! This creamy, garlicky dip is perfect for snacking with crackers, chips, or raw veggies. It’s a quick and easy dip that can be made in less than 5 minutes!
Ingredients

- 5 garlic scapes, chopped into smaller 1-2″ pieces
- 3 tablespoons lemon juice
- 1/2 cup raw unsalted pistachios
- 1 (15oz) can organic cannellini beans, drained and rinsed (also known as white kidney beans)
- pinch of salt
- 1/2 cup extra virgin olive oil
Instructions
- In a food processor, process garlic scapes, lemon juice, pistachios, cannellini beans, and salt until processed to a rough purée.
- With motor running, slowly drizzle olive oil through feed tube and process until fairly smooth.
- Serve with your favorite dipping food! (I have particularly been enjoying this dip with these baked crispy sea-salt crackers.)
